White queso spinach dip

I hesitate to file this under recipes because I wouldn’t call it a recipe, more of a winning combination maybe? Either way, I have never brought this somewhere and not been asked for the recipe. I think it has been what we have gotten the most messages about this year (maybe except for the lotion I put on my heels, who would have guessed so many people also have cracked heels!).

This all came about because I have spent 20 years trying to recreate a similar dip that was served at a local bar & restaurant where I went to school in Springfield, MO.

Anyways, here’s the non recipe, recipe :)

WHITE QUESO SPIN DIP

  • 8 oz block of cream cheese, cut into cubes

  • 10-12 oz package frozen spinach

  • 16 oz block of the queso blanco (white) Velveeta, cut into cubes

  • 16 oz jar salsa

Add all ingredients to a crock pot and cook on low until melted…or if you’re like me and are always short on time kick it up to high! Stir it every 20 minutes or so so the cheese doesn't get burnt on top. Serve with tortilla chips or soft pretzels.

That’s it. Barely a recipe, but I promise it’s good! Don’t get too stuck on the ounces either, I have used the bigger size block of Velveeta and smaller or larger size jars of salsa. I promise you won’t mess it up, it’s just queso!
